Pablo Remaggi
Pablo Remaggi is an Argentine pastry chef born in Junín, Buenos Aires, in 1984. With more than two decades of experience, he started his culinary career at the age of 16. After training at various institutions and gaining experience in Puerto Madero, he founded the PR Pastry School in Junín in 2010, where he teaches pastry, chocolate making, and sweet bakery courses.
In 2023, Remaggi published his first book, "Alfajor, Argentine Identity: Formulas, Techniques, and Fundamentals". This work explores the tradition of the alfajor in Argentine pastry, offering recipes and techniques for its preparation. The book has been highlighted for its contribution to the national gastronomic culture.
