Virgilio Martínez Véliz (1977) es un chef, investigador gastronómico y autor peruano, reconocido por su enfoque innovador en la cocina de territorio. Formado en escuelas culinarias de Canadá y con experiencia en restaurantes de Europa, regresó a Perú para desarrollar una propuesta centrada en la biodiversidad y los ecosistemas andinos. Es el creador del restaurante Central en Lima, considerado uno de los mejores del mundo, donde articula una narrativa culinaria basada en altitudes, ingredientes nativos y técnicas contemporáneas. Su trabajo integra investigación científica y saberes tradicionales, posicionándolo como una figura clave en la gastronomía latinoamericana.

Es coautor de Central, libro que documenta su filosofía culinaria y el proceso creativo detrás de su cocina.
