Alberto Herráiz was born in Castilla-La Mancha in a family of four generations of restaurateurs. After having directed several restaurants in Spain, he moved to Paris, very close to Notre-Dame, in 1997 to open Fogón, where he perfected the art of paella, earning a Michelin star in 2009.

Some of his works as a writer include: Gazpacho (2006) or Paella (2011), with 108 recipes to enjoy this traditional dish of Spanish culture. Additionally, he teaches master classes on cooking at the Instituto Cervantes.
