Das Lebensmittelmonitoring hingegen ist ein System, das wiederholt und repräsentativ den Gehalt unerwünschter Stoffe in und auf Lebensmitteln misst und bewertet. Dazu gehören z.B. Pflanzenschutzmittel, Schwermetalle. Mit Hilfe des Lebensmittelmonitorings können gesundheitliche Risiken für Verbraucher erkannt und abgestellt werden.
